An article from an email exchange by Charlotte Deibert:
Good to hear you are interested in changing the way you eat, this is one of the best ways to take charge of your health and improve it.
I do a lot of fermenting, sauerkraut, carrots, green beans, pickles, vegetable and fruit salsas, Radishes, kimchi, raw milk yogurt and milk kefir, and kombucha. I have used a couple different types of containers but have like these jars the best, as I usually have 2-3 jars of different vegetables fermenting at a time, what I really like about them....I don't need to transfer the vegetables to another jar for storage. These jars are a closed system, they allow gases to escape but prevent air from getting in.
I can't afford the German crocks, maybe someday! The one store that I have found here in Salem that sells the German crocks and a variety of different size glass jars is a farm market called E.Z. Orchards, 5504 Hazel Green Rd NE, Salem, OR 97305. www.ezorchards.com
Cultures for Health is a company is in Hillsboro, OR and sell a variety of fermenting containers, supplies and cultures. I have ordered from them many times, great company, their site has a lot of good info and videos.
I have also bought this from Lehman's.
Hope this answers your questions, if not email me - Charlotte Deibert.
